Good Eats

Seems like I've been blessed with lots of good food and parties of late.  Here are my reviews.....all of these treats were new to me: 

1)
Brownies made with black beans.....even Ghiradelli makes a mix for those who want some fiber in their dessert.   I give the brownies we tried a C plus rating. They were ultra moist...but not very sweet.   
2)
Friends of friends have a new smoker . They smoked just about everything you could smoke for their last party.  They offered us a sample of their BACON EXPLOSION.

Explosion is layers of bacon with italian sausage pressed into the layers...smoked until...well heavenly . I give the bacon explosion an A minus.  It was a tad greasy, but nothing one couldnt help along by blotting it first.  The taste was outstanding.

3)  I had chicken thighs marinated in garlic, lime juice and walnuts in a paste.  I would have preferred chicken breasts and white meat, then it would have gotten an A plus.  Thighs just taste fatty to me, because they have more fat and I'm not a dark meat fan.  The marinade paste was outstanding, however. I will try it with white meat. 

and 4) 
a pineapple cilantro onion and cucumber salad. 
It was lacking in something.  Fresh enough but kind of blah.  The flavors didn't meld.  I'll not make this again. 

Any thing new on your plates??  Good, bad?  Want to share??  (and because it is a knitting blog: I plan to make these adorable pocket socks)

Over the 4th I ate several new dishes. One was lemon chicken. Chicken breasts were first marinated in fresh lemon juice and then baked with a little brown sugar and cream of chicken soup spread over them. WOW. A+

The socks are oh so cute!! I would love it if you would share where you found the pattern. I want a little teddy in my socks!

I would have given the chicken an A++ I love dark meat, I think chicken breasts are so dry. Sned your leftovers my way.

Sad to admit, but true, I'd have probably loved the bacon explosion AND the chicken thighs BECAUSE of the fat. LOL! Oh, I wish I couldn't stand fatty foods. ;) Cute little pockets on those socks. blessings ~ tanna

I tried to make coffee cake last week... it as a nightmare. Didn't bake, overflowed out of the pan into the oven... etc etc.

I eat brownies for the sugar and butter and chocolate. If I want fiber I eat fiber. :)

That marinade sounds divine ... but it seems like chicken thighs need to be braised for proper texture and to melt off that fattiness. (Not that I have anything against fat - we pour a whole cup of heavy cream into every small batch of ice cream we make. Eating the finished product is like applying lip balm.)

Pocket socks? I'm just excited to be making my way through my first pair. Wow, what a cool gift those would make if I stick a $5 bill in them for The Kid eh?

The Knight will need more info about bacon explosion. He too has a relatively new smoker and we do love the bacon... but this explosion sounds interesting too.
