Happy Father's Day

 To all the fathers, grandfathers, uncles and men who have filled the role of Father, Happy Father's Day. 

Not every father is perfect, not every mother is perfect.  A father who TRIES to be a wonderful father is far more precious than a father who thinks he can be wonderful without thought or reflection.  

"DO as I say not as I do" was heard at our home growing up.   That's the easy way to be a father. 
A father who is a model by his actions speaks clearly to his children on two levels.  
I am blessed that Fireman is such a Father. 

Here's to all the Dad's, including mine,  who have gotten us out of a pickle more than once:

And here's our favorite pickle recipe:

8 cups unwaxed pickles or cucumbers

2 cups onions if you wish

1T salt
1 c. vinegar
1 and 1/14 cup sugar

Cut the peppers and onions as thick or thin as you wish.
Sprinkle the salt over the pickles  and let them rest 5 minutes.  

Stir the vinegar and all that sugar until the sugar is nearly dissolved or completely dissolved if you are that patient...

Pour the liquids over the pickles and refrigerate at least 4 hours before serving.  Better as they sit in the fridge for a couple days.  
I should say they keep 3 weeks in the fridge per Sue, but they don't last a week around here.

My dad was very fond of an onion and a cucumber fresh from the garden sliced and soaked in vinegar, water, salt and pepper, so your recipe today provokes precious memories.

Happy Father's Day to Fireman and all!! Thanks for the pickle recipe. We just counted 23 blooms on the cucumber vine so I think we are going to have all we need to make pickles!

I haven't been able to grow a single cucumber plant this year for some weird reason but if I do, I'll be pickling them for sure as you can't buy a decent cucumber around here.
